Our Island Spice blend bursts with tropical flavor and makes a delightful partner with the vegetables in this salad recipe.
Ingredients
- ¾ uncooked rice
- 1½ tsp Stuart's Spices Island Spice
- 1 can black beans, well rinsed
- ¾ cup corn, frozen or fresh (if fresh, cook first)
- 1 red bell pepper, diced
- 1 bunch green scallions, chopped
- 1 mango diced (optional)
- black pepper to taste
- ½ cup olive oil
- ¼ cup apple cider vinegar
- Juice from 1 lime (~1 Tbsp)
- 1 Tbsp Stuart's Spices Island Spice
Instructions
- Cook rice per package instructions, adding 1 1/2 tsp Island Spice while cooking
- Let rice cool
- Toss the rice with beans, corn, pepper, scallions, and mango
- Generously pour dressing over salad, to taste. Mix well
- Add pepper to taste
