Our Island Spice blend bursts with tropical flavor and makes a delightful partner with the vegetables in this salad recipe.

Ingredients

  • ¾ uncooked rice
  • 1½ tsp Stuart's Spices Island Spice
  • 1 can black beans, well rinsed
  • ¾ cup corn, frozen or fresh (if fresh, cook first)
  • 1 red bell pepper, diced
  • 1 bunch green scallions, chopped
  • 1 mango diced (optional)
  • black pepper to taste
  • ½ cup olive oil
  • ¼ cup apple cider vinegar
  • Juice from 1 lime (~1 Tbsp)
  • 1 Tbsp Stuart's Spices Island Spice

Instructions

  1. Cook rice per package instructions, adding 1 1/2 tsp Island Spice while cooking
  2. Let rice cool
  3. Toss the rice with beans, corn, pepper, scallions, and mango
  4. Generously pour dressing over salad, to taste. Mix well
  5. Add pepper to taste
