An easy to make side dish that complements almost any main course!
Ingredients
- 1 Tbsp oil
- 1 cup long grain rice
- 3 Tbsp Stuart's Spices Santa Fe Seasoning
- ½ large onion, diced (~1 cup)
- ½ green pepper, diced
- 2 cups broth
- 1 cup diced tomatoes
- ½ cup corn
- ¼-½ tsp salt
Instructions
- Heat oil over medium heat.
- Add rice and onion, stir frequently for 5 minutes.
- Add Santa Fe Seasoning and continue to cook 1 more minute.
- Add broth, salt, tomatoes, pepper, and corn. Bring to a boil. Turn down heat to simmer, cover and cook 15-20 minutes until rice is done.
- Let sit for 5 minutes; fluff.
