- 3 plum tomatoes, chopped
- ½ large Vidalia sweet onion, chopped
- 1 green bell pepper, diced
- 1 (15 oz) can black eyed peas, rinsed and drained
- 1 cup frozen corn
- 2 Tbsp Stuart's Spices Chipotle Lime Seasoning
- Juice from 2-3 limes
- Mix ingredients together and refrigerate for at least 1 hour to allow flavors to meld.
